BOLINAO DELICACY
Binungey is the delicacy of Bolinao. It is not just an ordinary rice cake, what makes it different is how it’s cook and the presentation of it. It’s actually a rare type of suman as it is only done mostly by residents of Bolinao. The ingredients and cooking materials include: sticky rice, coconut milk, salt, banana leaves, bamboo poles and coconut husks.
Cooking this needs a lot of attention. The bamboo tubes are line up in a row and the fire is set on each side of the bamboo tubes. The process takes about three hours and you need to keep an eye on it to make sure the fire do not reach the tubes and burn them.
The taste of Binungey is not that distinct from other suman but the use of Bamboo tubes as well as the smell from the coconut leaf gives it delicate sweetness.
Binungey is sold in around Bolinao and it has an official stall in front of the St. James Church though often reaches nearby town.
